"This coffee comes to us from the Kata Mudaga cooperative and Kolla Bolcha washing station in the Jimma region of Ethiopia, between Limu and Sidama. The pair are relatively new and neighbor the well known Nano Challa cooperative. The Kolla Bolcha station and the Jimma region as a whole have benefitted greatly from investments by USAID’s Technoserve program, which offers agronomic assistance, equipment, and education on processing and value chain development. This has allowed Kolla Bolcha to highlight the unique terrior of western Ethiopia, which differs from the majority of Ethiopian coffees grown further to the east. 

 

Unlike a majority of washed Ethiopian coffees that lean cleaner, brighter, and more floral, we’ve found this lot to be considerably smoother. Mild tartness akin to white grape pairs with notes of melon and papaya, and the cup is rounded out by pleasant sweetness and florality reminiscent of butterscotch and honeysuckle. We’ve found the sweet spot for grinding this coffee to be slightly finer than you might usually grind a washed Ethiopia. Grinding finer preserves the smoothness of the cup and makes for a very well-rounded experience. Grinding coarser will unlock subtle hints of citrus making for a brighter cup, but will sacrifice some of the body and mouthfeel. However you choose to brew, we hope you enjoy!
